Spicy Coco Sauce

Coco- for coconut milk.  This sauce goes on or in a lot of things.  and it's tasty!

I use frozen chopped onion (about 1 1/2 cups)

                             Spicy Coco Sauce

  1              large  onion -- chopped
  4             cloves  garlic -- chopped
                        ginger, cinnamon, cumin, tureric, ground pepper, cayenne -- all to taste
  15            ounces  coconut milk
     1/2      teaspoon  sea salt
  1 1/2    tablespoons  brown sugar

saute onion, garlic, and spices in coconut milk.  Add salt and brown sugar and reduce for 20 minutes.  Sauce will hold for 5 days refrigerated, or you can freeze it.
